Silver Needle White Tea | 白毫銀針 

Tasting notes: Bright, cucumber, watermelon

One of China’s ten most famous teas, and the most highly prized of all white teas, Silver Needle White Tea is made entirely of plump, nutritious buds, still covered in white furry down. A very refreshing tea, it has a bright flavour with notes of fresh cucumber and watermelon, finishing with a sweet aftertaste.

Silver Needle (白毫銀針 Bai Hao Yin Zhen) is the highest picking grade of white tea. Harvesting buds only is an intensely laborious process that requires great skill, and thousands upon thousands of buds are needed to make up just one kilo of Silver Needle, which is why it can fetch extortionate prices on the market.

Our Silver Needle is from Mr Mei, our trusted farmer in Fuding, Fujian, and is made from the Fuding Dabai cultivar, which is known to have especially furry buds. The buds are picked in the  first harvest after winter (pre-Qingming Festival), when the plants haven’t yet been exposed to a lot of sunlight and the buds are still plump, juicy and full of nutrients.

It is minimally processed—the buds are simply withered and dried—preserving the inherent antioxidants and polyphenols in the leaves and honouring their natural flavour.

Contrary to what you might think, this delicate tea does quite well with hot water, around 90°C. The little white hairs form air bubbles as a protective layer around the buds, making them float above the water, so you’ll need to gently push them down into the water to get a full infusion.

These are just guidelines. As we always say, it’s best to experiment with a range of temperatures and leaf-to-water ratios to understand the tea and your own taste preferences.
