Alishan High Mountain Oolong | 阿里山高山烏龍

 Tasting notes: Vegetal, floral, buttery
 Origin: Alishan, Jiayi, Taiwan
 Cultivar: 青心乌龙 Qingxin Oolong

 Elevation: 1680m
 Oxidation: ⦿⦿○○○
 Roasted: Medium

Grown in lofty elevations where the tea plants are blanketed in a sea of clouds (雲海 yun hai) every morning, this outstanding Alishan High Mountain Oolong tea is fresh, vegetal and floral with a buttery texture. It is custom-made to be slightly more roasted than most Alishan oolongs, to suit the preference of our customers.

Every sip of this tea is imbued with mountain essence (山頭氣 shan tou qi), instantly transporting you to the misty mountainous region of Alishan, Taiwan. It’s as if the leaves carry the crisp highland air of their birthplace with them, releasing it into the water as they unfurl bit by bit with every infusion.

Our Alishan High Mountain Oolong is sourced from a small family-run farm in Shizhuo 石卓 at an elevation of 1680m—the highest in the Alishan region. At that altitude, the climate is cool and wet and the tea takes longer to grow. This results in thicker leaves rich in vitamins and minerals and an incredibly nuanced flavour profile.

This tea is produced in small batches and processed entirely by hand.

Gongfu style (Gaiwan)
6g | per 100ml | 95°C | 1 min
+10s per steep for at least 5 steeps

Western style (Teapot)
3g | per 100ml | 95°C | 3 mins
+ 1 min per steep for at least 3 steeps

Cold brew
10g | 1L | Room temp/ refrigerated | 6 hours

Alishan High Mountain Oolong works well with temperatures under boiling. You can rinse the tea first to speed up the unfurling process and get a stronger first infusion.

These are just guidelines. As we always say, it’s best to experiment with a range of temperatures and leaf-to-water ratios to understand the tea and your own taste preferences.
