Recipe: How to Make Hojicha from Expired Japanese Green Tea Leaves

Simply roast the “expired” gyokuro or sencha in a (preferably) clay pot over heat for a few minutes, watch the leaves turn brown and wait for a nutty, roasted aroma to fill the air! This is basically “hojicha”.
