Zhengshan Xiaozhong | 桐木關小種

Tasting notes: Woodsy, minerally, red date
 Origin: Tongmuguan, Fujian, China
 Cultivar: 武夷菜茶 Wuyi Caicha
 Elevation: 1000m
 Oxidation: ⦿⦿⦿⦿⦿

A teaCLUB exclusive, Zhengshan Xiaozhong refers to black tea produced in the 12 traditional tea villages in Tongmuguan, Fujian. Its characteristic qualities include small leaves, a dark glossy colour, vibrant ruby liquor and a rich, sweet aroma with notes of pine and jujube.

“Zhengshan” 正山 refers to the main Wuyi mountain, or the “True Mountain”. This term was introduced to distinguish between teas from Wuyishan and teas from other regions, which were made in the same style to meet the rising demand. “Xiaozhong” 小種 (Small Variety) is the tree varietal that grows natively in the region.

While Zhengshan Xiaozhong still has the minerally notes of Wuyishan oolong teas we are familiar with, it is processed differently, being a black tea. It undergoes an extra stage called “hot oxidation”.

This particular batch of unsmoked tea was recommended to us by A Meng, who we source our Wuyi rock teas from. We like it for its ruby liquor and its rich, minerally flavour with hints of tree bark and red date.

Gongfu style: 4g in 100ml of 95°C water for 45, 60, 75-second steeps

Western style: 2g per 100ml of 90°C water for 3-minute steeps

These are just guidelines. As we always say, it’s best to experiment with a range of temperatures and leaf-to-water ratios to understand the tea and your own taste preferences.
